What is True Caviar?
Traditionally, the term 'caviar', has come to refer, exclusively, to the roe of the wild sturgeon of the Caspian or Black Seas.

Whilst today, large quantities of 'caviar' are produced in various countries, including China, Romania, the USA, Canada, Poland and France, specialist gastronomes are agreed that only the caviar of the Caspian Sea can truly meet the high standards and expectations of real aficionados of this delicacy.

Iranian Caviar in particular, is especially prized by the true epicure.
